To use new SKU Mode POs, you'll want to do a bit of configuration first.
Attribute configuration
To use SKU mode POs, you'll first need to set up attributes for purchase order columnization. The attribute configuration you set here will create columns on your PO which will allow you to group and order items by specific product attributes. For example, you may want to order shirts by Color and Size. These attributes will become "Identifying" attributes.

In the Navigation menu, go to Administration > System Config > Attributes.

Select an attribute from the left-hand panel to display the attribute's settings.

In the Associations pane, select the checkbox for "Identifying" at the SKU level.

The attribute must also be marked as "Allowed" at SKU level, but does not need to be marked as "Required" (optional).

Note: When adding items to a PO, you may come across SKUs which are not able to be added- this is indicated by a red X in the "Add SKUs" window. This red X indicates that the SKU you've selected does not have an a value set for the Identifying attribute. Jump into the Product Information tool, and set a value for the Identifying attribute(s) you configured above. For example, if your one of your identifying attributes is "Color", and your product does not have a color selected, correct this in the product record.
